During a recent visit to New Orleans, I fell in love with the famous Cafe Du Monde and their amazing Beignets (Pronounced: “Ben-Yays”). While you can actually make them from scratch pretty easily, they sell a mix that I used to cut down the prep time.

With an enticing food item such as this I find it necessary to make really small batches, otherwise I eat too many. So instead of using 2 cups of the mix to make 24 donuts, I used 1/4 cup to make 4 smaller ones. I found the easiest way to cut the dough was actually using a pizza cutter, it cut super straight lines! Once they are cut into smaller pieces you just shallow fry them, while basting them with the hot oil until golden brown. Lastly, don’t forget to top with the very crucial powdered sugar while the beignets are hot.
They don’t age well, so if you make or buy them, eat them while they are warm.
